Bending the Arc references a quote by Rev. Dr. King who said, “The arc of the moral universe is long, but it bends toward justice.” This digital newsletter from the CSA Justice, Peace, and Integrity of Creation office showcases the work of changemakers, opportunities to learn, and opportunities for you to help “bend the arc” toward justice. Cheers to Climate Friendly Beer & Baked Goods!

July 11, 2025
By Tracy Abler, Justice Coordinator

Wisconsin breweries are creating beers made with a climate-friendly grain called Kernza®, a revolutionary perennial grain that offers a sustainable alternative to conventional annual crops like wheat. Kernza® has deep roots - sometimes extending over 10 feet - allowing it to prevent soil erosion, access water in droughts, and hold carbon underground. It also provides habitat for wildlife, especially during nesting periods, and can be used as a forage crop for livestock.

Kernza® is not only used for brewing. It can be a substitute for traditional wheat flour and used in various baked goods, including bread, muffins, pancakes, crackers and cereals.

For beer lovers interested in drinking a climate friendly beverage, check out:
Karben4 Brewing in Madison, which has Fantasy Factor, a smooth, fruity, and tropical IPA with exceptional citrus flavors and aromas.
Lakefront Brewery in Milwaukee, offers Kristal Kernza, a rye-like nutty beer that would go great with banana bread.
Driftless Brewing Co. in Soldiers Grove was the first to brew with Kernza, and have done so multiple times, include their Deep Roots Kernza Ale.

Little did I know, the story of Kernza began in the 1980s. Read more here: https://cropsandsoils.extension.wisc.edu/kernza/  or watch this PBS video here: https://www.youtube.com/watch?v=j12vrJIh0Tk&t=20s
